Australian macadamia nut aloo tikki chaat

INGREDIENTS

For the tikki:  

  • 4-5 potatoes, boiled and mashed 
  • 2 tsp rajgira (amaranth) atta 
  • 1 tsp green chilies, chopped   
  • 2 tsp coriander leaves, chopped  
  • 1 tsp jeera (cumin) powder 
  • 4-5 macadamia nuts, crushed

 

For the stuffing:  

  • 6-7 macadamia nuts, chopped  
  • 1 tsp raisins 
  • ¼ Cup paneer, shredded 
  • 1 green chili, chopped  
  • 2 tsp coriander leaves, chopped

 

For the chaat:  

  • ½ Cup sweetened curd 
  • 2 tsp green chutney 
  • 2 tsp imli chutney

 

For the garnish:  

  • Chopped coriander leaves 
  • Red chili powder 
  • Pomegranate

 

INSTRUCTIONS
  1. In a bowl, add boiled potatoes, green chilies, coriander leaves, cumin powder, rajgira atta, crushed macadamia nuts and salt to taste. Mix well.
  2. Prepare the filling by combining the shredded paneer, green chilies, coriander leaves, raisins and chopped macadamia nuts
  3. Stuff the potato mixture with the stuffing and shape into round tikkis
  4. Heat oil in a pan and fry till crisp and golden brown
  5. Plate and top with sweetened curd, green chutney, imli chutney, pomegranate, coriander leaves and red chili powder
