INGREDIENTS
For the Salad
- ½ cup cooked quinoa
- ¼ cup boiled chickpeas
- ¼ cup sprouts
- ¼ cup cucumber
- ¼ cup onion
- ¼ cup cherry tomatoes
- ½ cup ripe mango
- A handful of mint
- ¼ cup roasted Australian Macadamia Nuts
For the Dressing
- 1 tbsp olive oil
- 1 tsp lime juice
- ½ tsp Dijon mustard
- 1 tsp honey
- ½ tsp grated ginger
- Salt to taste
INSTRUCTIONS
- Add quinoa, chickpeas, sprouts, cucumber, onion, cherry tomatoes, mango, mint, and roasted Australian Macadamia Nuts to a large bowl.
- In a separate bowl, whisk together olive oil, lime juice, Dijon mustard, honey, ginger, and salt.
