INGREDIENTS

For the Salad

  • ½ cup cooked quinoa
  • ¼ cup boiled chickpeas
  • ¼ cup sprouts
  • ¼ cup cucumber
  • ¼ cup onion
  • ¼ cup cherry tomatoes
  • ½ cup ripe mango
  • A handful of mint
  • ¼ cup roasted Australian Macadamia Nuts

For the Dressing

  • 1 tbsp olive oil
  • 1 tsp lime juice
  • ½ tsp Dijon mustard
  • 1 tsp honey
  • ½ tsp grated ginger
  • Salt to taste
INSTRUCTIONS
  1. Add quinoa, chickpeas, sprouts, cucumber, onion, cherry tomatoes, mango, mint, and roasted Australian Macadamia Nuts to a large bowl.
