No-bake macadamia farali cheesecake

INGREDIENTS

For the crust:  

  • 1 cup Australian macadamia nuts, roasted  
  • 7-8 dates, pitted 
  • 1 tsp desi ghee 
  • 1-2 pods elaichi 

 

For cheesecake filling:  

  • 1 cup paneer/ chenna 
  • ½ Cup fresh cream 
  • ½ Cup hung curd 
  • ¼ Cup macadamia nuts, soaked 
  • ½ Cup sugar 

 

For the garnish:  

  • 2-3 macadamia nuts, grated 
  • A few saffron strands 
INSTRUCTIONS
  1. In a blender, combine roasted macadamia nuts with pitted dates and 1 tsp desi ghee until a crumble forms. 
  2. Place the mixture in a small glass bowl and press down to pack 
  3. To make the filling, use a blender to combine the paneer, fresh cream, hung curd, sugar, soaked Australian macadamia nuts  
  4. Add the mix on top of the crust, and garnish with some saffron strands 
  5. Cool for 4-5 hours in a refrigerator  
  6. Garnish with crushed macadamia nuts and silver foil (chandi ka varak)
