Australian Macadamia Nut Mango Sorbet

INGREDIENTS
  • 1/2 cup Australian Macadamia Nuts (soaked for 4-6 hours) 
  • 1 cup ripe chopped mangoes 
  • 2-3 tbsp honey or maple syrup (adjust to taste) 
  • Juice of ½ a lemon  
  • ½ cup coconut milk or water (for blending) 
  • Optional: ½ tsp vanilla extract or a dash of cardamom
INSTRUCTIONS
  1. Soak & Drain the Nuts:
    Soak the Australian Macadamia Nuts in warm water for 1-2 hours.

  2. Blend the Base:
    In a blender, add soaked Australian Macadamia Nuts, chopped mango, honey or maple syrup, lemon juice, and coconut milk. Blend until smooth and creamy.

  3. Freeze:
    Pour the mixture into an airtight container and freeze for 4-6 hours, or until firm. Stir once or twice during freezing to avoid large ice crystals.

  4. Serve:
    Let it sit at room temperature for 5 minutes before scooping. Garnish with roasted and chopped Australian Macadamia Nuts or fresh mango cubes or pulp and mint leaves for texture and presentation.
